THE FRUIT : A small yellowy orange citrus fruit, the true mandarin is grown exclusively in Sicily. Rare, hardly known and difficult to find, the mandarin is full of surprise flavour and once one forgets the seeds, it awakens the taste buds. SEASONALITY : The mandarin makes its appearance over the month of December, until about the month of March. This maceration is a secret. The mandarin, being a fragile product, and difficult to find, is produced in small quantities at the beginning of each year.
